Fleur de Kale

Check out these stunners! Have you ever eaten a kale flower before? Neither had I. I was in the city this week and near the Union Square Farmers market and took a quick stroll through (it's fun to see many of the same vendors in the city that I normally see in Hudson). 

I stopped upon a stall selling beautiful yellow flowers attached to slim stalks labeled "kale flowers." After the cold months the vegetables bolts and the results are these tender, sweet edible flowers. How pretty! I had to have them, so into my bag and back upstate they went to make a pretty salad.

I was tired from an early train in that morning and wanted to make something simple for supper. I roasted some Italian sausages before I went to work on these beauties. I also picked up some hothouse tomatoes so I sautéd them until the starting to soften with a little bit of garlic and hot pepper flakes. I then added the kale flowers and cooked everything together until just cooked and garnished with a bit of chopped parsley and garlic chives. C'est parfait.
